Recipe Time!

If you’re anything like our family, breakfast or “brestkist” as my daugthers call it- is an incredibly important part of our day. We all wake up hungry and motivate ourselves to get dressed knowing that after we’re ready for the day we get to eat together. We love to pray, talk with one another and start our day together. 
Like many people though, I get tired of the same old thing all of the time. I want it to be healthy, affordable and delicious. If it’s really easy to make, that’s a bonus 🙂 So one of our favorites around here is Baked Oatmeal. I know there are a gazillion different recipes to try, but I encourage you to give this one a chance. It’s a classic recipe from my family’s chuch camp. I make it the night before so all I have to do in the morning is put it in the oven. What could be more easy than that? Not to mention, it is delicious!
Baked Oatmeal
1 c oil (or 1/2 c oil, 1/2 c applesauce)
1 1/2 c white sugar
4 eggs
2 c milk
2 tsp salt
2 Tbsp baking powder
6 cups quick oats
Mix the above together and pour in pan.
4 T brown sugar
2 t cinnamon
Mix together and sprinkle on top.
Refrigerate overnight in lightly greased 9×13 pan. Bake 375* for 30 minutes on bottom rack.
