5 Minute Taco “Meat”

Tired of the same old, same old?  Looking to try something new for dinner this week??

I’ve got a super quick, super tasty, and super nutritious new dish for you to try!

We love making tacos/fajitas for a quick week day meal, but after a while of making them the same way, we start brainstorming ways to mix it up a bit.  I found this recipe recently when looking for a creative plant-based protein recipe at work.  I had never thought of using chopped nuts as a sort of taco meat alternative, so I had to give this a try!  We made this yesterday and it was delicious!!

5 Minute Taco “Meat”

1/2 cup cashews

1/2 cup almonds or walnuts

1/3 cup sun dried tomatoes (packed in oil)

1/2 tsp chili powder

1/4 tsp cumin

pinch of red pepper flakes

2-4 tbsp olive oil

Put all ingredients into a food processor (we used a Magic Bullet).  Pulse until you get desired consistency.  Add more oil if it looks too dry.  Do not over process or it will be a paste!  The flavor is best once it sits a bit.

We added this to our fajitas and it was fantastic mixed in with all the other flavors.  Next, we’re going to try it on top of nachos.
